Easy Peasy Chocolate Chip Protein Bites

Do you like snacks? My kids and I love bringing along these satisfying delicious plant based bites as we are running around from one activity to the next. I mean who doesn’t like chocolate chip anything? Packed with chickpea powder, broccoli sprout, alfalfa sprout, radish sprout, quinoa, pumpkin, pomegranate, mushroom and more oh my!

It wasn’t that long ago when I had to place a STOP sign on our kitchen pantry door. Seriously. I don’t know about you but the “Mom, can I have a snack?” all day long was driving me crazy. I finally wised up and stopped buying packaged snacks and that made a huge difference. We are bombarded daily with quick fixes and they are just things that are processed and bad for us, yet we keep going back to them. Ah! That is exactly what they are meant to do and unfortunately it works. Have you noticed the bowls of candy or lollipops in businesses offered to kids to keep them quiet or happy while parents can get something done. After all of that sugar hits it usually causes a surge of energy and or crash with emotion once it is gone. Hence my appreciation for healthier alternatives with a son who taught me at an early age not all children process or handle sugar the same way. In preschool my son taught me that he needed substance when I picked him up, not processed cracker things, so we tried protein bars for kids and it helped but it was still processed so discovering how to make something myself has been life changing. Easy Cashew Cookie Bites (Chocolate Chip Bites)

Equipment

  • large bowl and a food processor

Ingredients
  

  • 1 1/3 cup raw cashews
  • 2/3 cup gluten free old-fashioned oats
  • 5 tbsp raw unfiltered honey or agave (I use honey)
  • 1 scoop vanilla plant based protein (ask me about my favorite)
  • 1/3 cup dairy-free mini-chocolate chips (Enjoy Life)

Instructions
 

  • Blend cashew and oats in the food processor until a flour consistency
  • Stir in protein, honey or agave
  • Fold in chocolate chips and roll using both hands into bite size balls and Enjoy!

Notes

I have to admit I usually always double this recipe because they go so quickly.
